When we moved into our house several years ago, one of my first memories is walking across the street to the local farmers market. It was small at the time, and one of the first things we bought there was an Ellie’s Old Fashioned Doughnuts (naturally). Who needs fruits and veggies when there are doughnuts nuts???

They are covered in cinnamon sugar and emit the BEST smell throughout that parking lot/shed that house the market. We still love walking over on Saturday and letting the smell hit us in the face, especially in the fall. There is something so magical about cool temps and the smell of doughnuts. Right?

All that is why I had to buy that jug of Apple Cider that has made its way to the shelves of my grocery store and use it to make the MOST comforting treat for fall, Apple Cider Doughnuts.

Recipe:

STEP 1: Warm ¼ cup of apple cider to about 100-110 degrees and place in the bowl of a stand mixer.

STEP 3: Add all-purpose flour, additional ¼ cup of cider, milk, butter, egg yolks, sugar and salt and mix on low until a dough forms or comes together like a ball. It should be somewhat elastic.

STEP 4: Place dough in a greased bowl and cover with a tea towel or plastic wrap.

STEP 5: Sit dough aside in a warm place to rise for 1 ½ hours.

STEP 6: Once dough has doubled in bulk, place on a floured surface.

 

STEP 7: Roll dough out to about ½” thickness.

STEP 8: Using a donut cutter or round cookie cutter, cut out as many doughnuts as possible. (If using a cookie cutter, use something about 1” Diameter to cut a hole in the middle. I have used the other end of a piping tip before.) Do not re-roll dough.

STEP 9: Place cut out doughnuts on a cookie sheet lined with parchment.

STEP 10: Cover doughnuts with a tea towel and sit them in a warm place to rise 20-30 minutes or until puffy looking.

STEP 11: When ready to fry, heat oil in a large dutch oven or pot until it reaches 350 degrees.

STEP 12: While waiting for oil to heat, mix together sugar and cinnamon and place in a shallow dish.

STEP 13: Fry the doughnuts, (I did 3 at a time) about 2 minutes on each side. Don’t forget the donut holes, too!

STEP 14: Drain the doughnuts on a paper towel-lined plate to let cool for a few seconds.

STEP 15: Toss the doughnut in the cinnamon sugar mixture, being sure to coat.

Apple Cider Doughnuts

Servings 12 doughnuts

Ingredients

Doughnuts:

  • 2 1/4 teaspoons dry active yeast
  • 3/4 cup whole milk room temperature
  • 1/2 cup apple cider divided
  • 3 1/4 cups all-purpose flour
  • 4 tablespoons butter room tempertature
  • 3 large egg yolks
  • 2 tablespoons sugar
  • 1 teaspoon salt

  • 1 cup sugar
  • 1 teaspoon cinnamon
