We have a holiday coming up in a couple of days! Who’s looking forward to a looonnnggg weekend? I’ll be cooking out with some friends this weekend where everyone is tasked with bringing a side dish! Who doesn’t love potluck?
Here is a great side dish you can put on a skewer! I love making skewers for parties because they are easy to pick up and walk around with. This recipe could be easier and it is delicious and crowd pleasing!
RECIPE:
STEP 1: Preheat oven to 375 degrees.
STEP 2: Peel and cut sweet potatoes into small chunks (about 1″). Place into a bowl and toss with olive oil.
STEP 3: Take slab of bacon and cut into 4 equal parts. Set aside.
STEP 4: Take a skewer and slide a sweet potato chunk onto it. (side note: it was a little difficult to get the hard sweet potato onto a wood skewer. I found that twisting it on was the easiest way. Metal skewers may be better) Take a piece of bacon and fold in half ans slide onto skewer. Continue until you feel as many as you like.
STEP 5: Mix together brown sugar, granulated sugar, cinnamon, nutmeg, cloves, cayenne pepper and red pepper flakes and pour into a shallow pan.
STEP 6: Dredge each skewer into the sugar/spice mixture and cover well.
STEP 7: Prepare a pan by covering with foil and place a cooling rack on top. Spray the cooling rack with cooking spray.
STEP 8: Place your prepared skewers onto the prepared pan.
STEP 9: Bake skewers for 30 minutes or until potatoes are fork tender and bacon appears cooked.
Sweet Potato Skewers
Ingredients
- 2 lbs sweet potatoes
- 2 tablespoons olive oil
- 1 pound bacon
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon red pepper flakes
