Cinco de Mayo is 1 week away and while we won’t be heading out to our favorite local Mexican restaurant, we can still celebrate at home! Set up a taco bar for your family and get festive. I do recommend, however, branching out from the typical ground beef or shredded pork (which are still delish).
Today, I am sharing an old favorite I made several years ago while hosting a group of girls, some of who are vegetarians. I honestly never thought about looking for an alternative until I didn’t want half of my get together to be stuck eating chips and salsa.
It also doesn’t get easier than roasting sweet potatoes and it is so versatile, you can add different toppings of your liking and the sweet potatoes are so hearty, you will not miss the meat.

Recipe:
STEP 1: Preheat oven to 400 degrees and prepare a large baking sheet by covering in foil.
STEP 2: Cut your sweet potatoes into little squares and place into a large bowl.
STEP 3: Drizzle sweet potatoes with extra virgin olive oil and toss.
STEP 4: Add chili powder, salt & pepper and toss to combine.
STEP 5: Transfer sweet potatoes to the prepared baking sheet.
STEP 6: Roast potatoes for 20-25 minutes or until desired doneness.
STEP 7: Assemble the tacos by adding sweet potato, cotija cheese and cilantro. Squeeze lime juice on top. Enjoy!
Note: You could add black beans for even more filling. You could also add red onions, slices of avocado, or roasted pepitas for extra crunch.

Vegetarian Sweet Potato & Cotija Tacos
Ingredients
- 2 Medium sweet potatoes
- Garlic Infused Extra Virgin Olive Oil
- 1 teaspoon chili powder
- salt & pepper
- corn tortillas
- cotija or queso fresco
- bunch of cilantro
- limes
- optional: avocado, red onions, roasted pepitas
Instructions
- Preheat oven to 400 degrees and prepare an large baking sheet by covering in foil.

Notes
Feel free to add more ingredients such as avocado or roasted pepitas. You can customize to your liking.
