I am dying to throw a party or just have a dinner party, y’all! I can’t wait until we can gather again. Hoping it is sooner than later. If you still want to get festive and celebrate Cinco de Mayo with your family at home, I have a great party recipe for you. I L-O-V-E Mexican food. I love the spicy & bold flavors of it and this recipe is packed full of it. With a marinade of tequila and citrus juices, its basically a Margarita in chicken skewer form.
You can also get outside with this one and fire up the ol’ grill. I did mine inside on grill pan since we currently live in a townhome and grilling is a bit of a challenge.

Glass Bowls / Pyrex / bamboo skewers
Recipe:
STEP 1: Add Tequila, lime juice, orange juice, chili powder, jalapeño, garlic, salt & pepper to a large bowl and stir to combine.
STEP 2: Add chicken breast and refrigerate overnight. You don’t want this to go longer than 8 hours. The acid from the juice will slightly start to cook the outside of the chicken.
STEP 3: Remove the chicken from the marinade.
STEP 4: Using a bamboo skewer (that had been soaked in water to prevent catching on fire), thread through each chicken tender.

STEP 5: Sprinkle the skewers with salt and pepper and lightly grease your grill (whether indoor or outdoor).
STEP 6: Grill chicken for about 5 minutes on each side or until internal temp reaches 165 degrees. This will take longer or shorter depending on the thickness of your chicken.
STEP 7: Remove from grill, place on serving platter and sprinkle with a bit of cilantro. Enjoy!

Tequila Lime Chicken Skewers
Celebrate Cinco De Mayo by pulling out your grill or grilling indoors with these Tequilla Lime Chicken Skewers that are packed full or flavor.
Ingredients
- 1/2 cup Tequila
- 1 cup lime juice
- 1/2 cup orange juice
- 1 tablespoon chili powder
- 1 tablespoon jalapeno, minced
- 1 tablespoon garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 6 chicken tenders
Instructions
- Add Tequila, lime juice, orange juice, chili powder, jalapeno, garlic, salt and pepper to a large bowl and stir to combine.
- Add chicken tenders and refrigerte overnight, but no longer than 8 hours.
- Remove chicken and discard marinade.
- Using a bamboo skewer, thread through each chicken tender.
- Sprinkle the skewer with salt & pepper and lightly grease your grill.
- Grill chicken for about 5 minutes on each side or until internal temp reaches 165 degrees.
- Remove from grill, place on serving platter and sprinkle with cilantro.
