Now, I am about to admit something, a lot of people will not understand…..I don’t know….who is even playing….in the Super Bowl. My family is just not that into the sports. Now I could go to a live game and have all the fun in the world. Being in the action is fun. But that is as far as it goes. Growing up, my youth group would always through super bowl parties in lieu of Bible Study on that particular Sunday night every year and I loved sitting with my friends and eating all the party foods (and, of course, watching the commercials and half-time show). If there is anything I do love and am passionate about is a “theme” party. So even though i may not be into the game itself, I am into any party and I can design a theme around. All this week, i will be posting party foods to get ready for ALL those Super Bowl parties that will be coming up on Sunday.
First up is a recipe for Rosemary Caramel Corn. Every party that involves watching something on TV should have popcorn, in my opinion. This is a bit of an elevated version and it is seriously delicious. You can buy those cute popcorn boxes on Amazon here. You can stick a football sticker or maybe your team’s logo to the front and you have an instant super cute display of this yummy snack.

RECIPE:
STEP 1: Pop 3-4 bags of popcorn. I used Orville Redenbacher’s Naturals Butter Flavored.(You will need about 14 cups of popcorn here)
STEP 2: Preheat the oven to 250 degrees.
STEP 3: In a small saucepan, add butter, sugar and corn syrup and place over high heat. Clip a candy thermometer to the side of your pot.
STEP 4: Let this cook, stirring constantly, until everything is melted and candy thermometer reaches 255 degrees.
STEP 5: Once the mixture has reached 255 degrees, remove from heat and stir in the rosemary, salt and baking soda.
STEP 6: Quickly pour this mixture over the popcorn and lightly toss until all pieces are covered.
STEP 7: Spread the popcorn out on a parchment lined cookie sheet.
STEP 8: Bake popcorn for 45 minutes, stirring every 10 minutes or so.
