I love these few weeks between Halloween and Thanksgiving. It’s a time to truly enjoy fall activities when the weather is cooler, but still nice enough to take walks and enjoy the pretty fall trees. I love the planning I get to do for the upcoming food-focused holiday. I love drinking all the pumpkin spice whatevers. I love the early Christmas shopping. AND, even though I refuse to put up Christmas decorations until the day AFTER Thanksgiving, I do occasionally enjoy a good Hallmark movie and turning on my Christmas playlist. Fall is also the perfect time to get together with your favorite people and brunch it out. Brunch is possible my favorite meal time. I love ALL the foods, especially WAFFLES. Who doesn’t love them??! As the late comedian, Mitch Hedberg once said, “A waffle is a pancake with syrup traps”. I mean, what is NOT good about that!
Since it’s a fall brunch we will be having over the next several weeks, naturally adding pumpkin to them is a given. BUT, I am throwing a little something else in there that may sound surprising, but is freakin’ delicious. Several years ago, the husband and I were in Atlanta for a work trip and had breakfast at Little Tart Bakeshop (which I highly recommend) and ordered the cheddar waffles. The combination of the salty cheese and maple syrup was surprisingly amazing. I never stopped thinking about those waffles, so I am incorporating them into my fall obsession and bring you this tasty waffle that is perfect for a fall brunch this year. Add these Sugared Pecans and maple syrup for the most perfect fall brunch recipe.

Recipe:
STEP 1: Preheat your waffle iron to medium to medium-high setting.
STEP 2: Mix together all-purpose flour, baking powder, salt, cinnamon and nutmeg in a large mixing bowl. Set aside.
STEP 3: Add milk, eggs, melted butter, dark brown sugar, pumpkin puree, and vanilla to another bowl and whisk until combined.
STEP 4: Pour the wet ingredients into the dry ingredients and fold together until just combined.
STEP 5: Add cheese to the batter and fold in.
STEP 6: Pour a scoop of batter onto your waffle iron and allow to cook according to manufacturer’s instructions.
STEP 7: Repeat with all batter until cooked. Keep cooked waffles warm in a 200 degree oven.
STEP 8: Serve with maple syrup and sugared pecans.

Pumpkin Cheddar Waffles
Ingredients
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 1/3 cup milk
- 2 large eggs
- 6 tablespoons salted butter, melted
- 1 tablespoon dark brown sugar
- 1/2 cup pumpkin puree
- 1/2 teaspoon vanilla
- 1 cup shredded sharp cheddar
Instructions
1. Preheat your waffle iron to medium or medium high heat.
