It’s National Doughnut Day!!! Possibly one of my favorite days of the year, ya know, behind Christmas, Thanksgiving and birthday. I heart doughnuts. They are really one of my favorite things. Doughnuts are my love language. What is even better than a full doughnut sometimes is a DOUGHNUT HOLE. It makes me feel like I am being healthier and helping me keep my hot girl summer physique. HA! Who am I kidding, I have had 3 babies so those days are long gone. I guess I just eat more of these delicious bits of heaven. These Lemon Poppyseed Doughnut Holes are perfect for a summer brunch with their bright and citrus-y flavor. You can add them to a skewer for a cute way to serve or just piled into a bowl. Not one will be left over!

Ingredients for Lemon Poppyseed Doughnut Holes:
- All-Purpose Flour
- Poppy seeds
- Lemons
- Baking Powder
- Eggs
- Sugars
- Buttermilk
- Butter
- Vanilla
- Vegetable Oil
- Powdered Sugar

Recipe:
STEP 1: Add flour, poppy seeds, lemon zest, baking powder and salt to a mixing bowl.
STEP 2: Mix dry ingredients together until well incorporated.
STEP 3: In another bowl, mix together eggs, sugar, buttermilk, melted butter and vanilla.
STEP 4: Add wet ingredients to the flour mixture.
STEP 5: Mix until well combined and dough has formed. Chill the dough for 1 hour.
STEP 6: Once dough is chilled, turn out onto a well floured surface.
STEP 7: Roll dough into 1″ balls and place onto floured wax paper. Make sure hands are floured.
STEP 8: Fill a dutch oven with oil and heat until it reaches 375 degrees.
STEP 9: Use a slotted spoon to add 3-4 holes to the oil at a time and fry for 3-4 minutes, turning once.
STEP 10: Remove from oil and place on a paper towel lined plate.
STEP 11: Mix the glaze together by mixing the lemon juice and powdered sugar until smooth.
STEP 12: Once holes have cooled slightly, dip the hole into the glaze and turn until coated.
STEP 13: Remove and enjoy!

Lemon Poppyseed Doughnut Holes

Ingredients
- 1 1/2 cups all-purpose flour
- 3 tablespoons poppy seeds
- 1 tablespoon lemon zest
- 1 1/2 teaspoons baking powder
- 1/2 teaspoons salt
- 2 large eggs
- 1/2 cup sugar
- 1/4 cup buttermilk
- 3 tablespoons melted butter
- 1 teaspoon vanilla
- 6-8 cups vegetable oil
- 1/4 cup lemon juice
- 2 cups powdered sugar
