When I originally planned this post, I was thinking it could be a great spring recipe for any spring time parties. Brunch, showers, teas, etc. are just a few parties we would usually be enjoying this spring. This coronavirus situation has this all on hold at the moment, however that does not stop us from having tea parties with out kids or making treats for the neighbors (delivered with gloves and a mask). Which is what I plan on doing here. We all wave to each other from 6′ apart everyday when we are having our afternoon strolls and the kids are riding their bikes. I thought this may be a delicious treat to package up and bring a smile to someone’s face. 

I am fully confident that we will (hopefully soon) be enjoying gatherings and parties once again. So save this one for your next get-together. It’s really good, really easy and will be a hit at any party or as a nice treat for your friends and neighbors.

Ingredient for Lemon Goat Cheese StrawsGlass Bowls 

Recipe:

STEP 1: Add cream cheese, goat cheese, heavy cream and lemon zest to a bowl and mix until well combined and smooth. Set aside.

STEP 2: Take the 2 sheets of puff pastry, add to a floured surface and add together to make a 10×20 rectangle. Press together to make 1 large sheet of puff pastry and roll out a bit if needed to achieve as close to this size as possible.

STEP 3: Add the cheese mixture to one half of the pastry, leaving 1/2″ around edge.

STEP 4: Fold pastry over and press the edges to seal. This should make a 10×10 square.

STEP 5: Sprinkle the top with salt.

STEP 6: Cut the square in half and brush with a beaten egg. This will give you 2 (5×10) rectangles.

STEP 7: Cut 1/2″ strips out of each rectangle making 40 straws.

STEP 8: Lightly twist each strip and place on a parchment lined baking sheet.

STEP 9: Refrigerate “straws” for at least 45 minutes before baking.

STEP 10: When ready to bake, preheat oven to 375 degrees. 

STEP 11: Bake for 18-20 minutes or until lightly browned.

STEP 12: After about 5 minutes, place straws on cooling rack to cool. Serve at room temp.

Lemon Goat Cheese Straws

Yield: 40 Straws
Prep Time: 20 minutes
Cook Time: 18 minutes
Additional Time: 45 minutes
Total Time: 1 hour 23 minutes

Ingredients

  • 1 box frozen puff pastry
  • 4 ounces goat cheese, room temperature
  • 4 ounces cream cheese, room temperature
  • 2 tablespoons heavy cream
  • 1-2 tablespoons lemon zest
  • 1 egg
  • 1 teaspoon coarse salt
  • all-purpose flour, for dusting

Instructions

  1. Add cream cheese, goat cheese, heavy cream and lemon zest to a bowl and mix until well combined and smooth. Set aside.
  2. Take sheets of puff pastry, place on a floured surface and combine to make a 10x20 inch rectangle.
  3. Add the cheese mixture to on half of the pastry, leavin 1/2 inch around border.
  4. Fold pastry over and press the edges to seal, making a 10x10 inch square.
  5. Sprinkle top with salt.
  6. Cut the square in half, making 2 (5x10) rectangles, and brush with beaten egg.
  7. Cut 1/2" strips out of each rectangle, making 40 straws.
  8. Light twist each strip and place on a parchment lined baking sheet.
  9. Refrigerate straws for at least 45 minutes before baking.
  10. Preheat ove to 375 degrees.
  11. Bake for 18-20 minutes or until lightly browned.
  12. After about 5 minutes on pan, place straws on a cooling rack.
  13. Serve at room temperature.
