Who needs a summery dessert for their cookout tomorrow?? These key lime bars are super easy, light, refreshing and perfect to take to your cookout when you don’t want a super heavy dessert out in the heat!

I actually first made these for a friend’s rehearsal dinner years ago. They wanted a variety of dessert bars, and I tested many recipes and these were some of my favorite. They are tart and delicious. They would be perfect for a baby or wedding shower, too!

Recipe:

STEP 1: Preheat oven to 350 degrees. Line an 8″ square pan with parchment, if desired.

STEP 4: Bake the crust for 10 minutes. Let cool completely before making filling.

STEP 9: Bake for 10 minutes or until set.

STEP 10: Let cool and then refrigerate until ready to cut. I like to refrigerate mine overnight before cutting. It makes for a cleaner cut when they are really cold.

Ingredients

  • 1 cup + 2 tablespoons graham cracker crumbs
  • 5 tablespoons butter melted
  • 1/3 cup sugar
  • 3 large egg yolks
  • 1 1/2 teaspoon lime zest
  • 1 can sweetened condensed milk
  • 2/3 cup fresh lime juice

Instructions

  1. Preheat oven to 350 degrees. Line an 8" square pan with parchment, if desired.

  2. Mix graham cracker crumbs, sugar and butter in a bowl.

  3. Press mixture into the bottom of the pan.

  4. Bake the crust for 10 minutes. Let cool completely before making filling.

Custard Filling

  1. Mix together egg yolks and key lime zest for about 5 minutes or until thick.

  2. Mix in condensed milk until well combined, about 3 minutes.

  3. Add key lime juice and mix until just combined.

  4. Pour filling over cooled crust.

  5. Bake for 10 minutes or until set.

  6. Let cool and then refrigerate until ready to cut.

  7. Cut into squares and top with whipped cream and a slice of key lime, if desired.
