St. Patrick’s Day is right around the corner and if there is anything I love, it’s celebrating with a theme! Whoopie Pies are one of those indulgent desserts that I don’t make often, but when I do….I think to myself “Why don’t I make these more often?” They are pretty easy to make and are perfect for a festive party. This is one of those recipes you can easily adapt to different holidays or themes. Since today we are focusing on St. Patrick’s Day treat, I went with GREEN!

Mint is one of those flavors that can be enjoyed with many different seasons. And when it comes to doing something festive for St. Paddy’s Day, green and mint just go together to me. The combination of the mint whoopie pie with the mascarpone fillings is super delicious.

Ingredients for Peppermint Whoopie Pies
- All-Purpose Flour
- Sugar
- Baking Soda
- Egg
- Vanilla Extract
- Peppermint Extract
- Buttermilk
- Green Food Coloring
- Butter
- White Chocolate
- Mascarpone Cheese
- Whipping Cream
- Powdered Sugar


Everything you need to make Green Peppermint Whoopie Pies with Mascarpone Filling:
How to Make Peppermint Whoopie Pies with Mascarpone Filling:
STEP 1: Start with the filling by adding chopped white chocolate and heavy cream to a small saucepan.
STEP 2: Heat over low heat while stirring until chocolate melts. Remove from heat and allow to cool for about 15 minutes.
STEP 3: In a mixing bowl, cream butter and mascarpone cheese together until well combined.



STEP 4: Add vanilla and beat until smooth.
STEP 5: Add Powdered sugar and mix until smooth.
STEP 6: Add melted chocolate and mix until smooth. Chill filling until time to fill the whoopie pies.



STEP 7: Make whoopie pies by beating butter in a large mixing bowl until light and fluffy.
STEP 8: Add sugar and beat until smooth.
STEP 9: Add egg, vanilla extract and peppermint extract and beat until smooth.



STEP 10: Whisk together flour, baking soda and salt. Alternately add flour mixture & buttermilk, beginning and ending with flour, and mix until just combined.



STEP 11: Add green food coloring until your get your desired color. Remember, that it will usually appear light when baked. I wanted mine to be a kind of mint green.
STEP 12: Scoop batter onto a lined cookie sheet about 2 inches apart. They will spread!
STEP 13: Bake at 350 for 7-8 minutes.



STEP 14: After a couple minutes cooling on the pan, transfer cookies to a wire rack to cool completely.
STEP 15: Line up cookies with like sizes.
STEP 16: Pipe filling to one side of each cookie and sandwich together.

- 1/2 teaspoon peppermint extract

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- green food coloring
Mascarpone Filling

- 1/2 teaspoon vanilla
- 4 cups powdered sugar
