Christmas season is also party season! As mentioned in my previous post for Honey Goat Cheese Balls, I am always looking for fun new appetizers to try for our annual Christmas Party. Pigs in a blanket (using puff pastry to class it up a bit) is a go-to for me. I make these ALL THE TIME. The recipe today is a fun take on those that will even make your vegetarian friends happy. I LOVE Figs. Dried Figs are basically like eating candy. There is also something that fills Christmas-y about a fig. I usually make my Fig & Pistachio Brie at Christmas, but this year I am taking my love of Figs and pastry and adding a little goat cheese to make this delicious and festive appetizer for the holiday season.

Recipe:
STEP 1: Add red wine vinegar, honey, red pepper flakes, salt, pepper and 1 cup water to a saucepan and stir until combined.
STEP 2: Add the figs and bring this mixture to a boil.
STEP 3: Once boiling, reduce the heat and let simmer for about 7-10 minutes or until the liquid is almost evaporated and syrup consistency.
STEP 4: Remove figs from pot and allow to cool. Cut into halves.
STEP 5: Scoop about a 1/2 – 3/4 teaspoon of goat cheese onto each half of fig and set aside.
STEP 6: Roll out 2 sheets of puff pastry to a 9 x 12 inch sheet.
STEP 7: Cut into 1″ strips on the 12″ side. Then eat strip in half, creating a 1 x 4.5″ strip.
STEP 8: Mix 1 egg with 1 tablespoon water. Brush one end of each strip,
STEP 9: Place your fig on the other end of the strip and roll sealing with the egg end. Place on a lined baking sheet.

STEP 10: Once all figs are rolled and placed on a baking sheet, brush tops with egg wash and sprinkle with poppy seeds or sesame seeds.
STEP 11: Bake at 400 degrees for 15-18 minutes.

Ingredients
- 1/4 cup + 2 tablespoons red wine vinegar
- 3 tablespoons honey
- 3/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 24 dried Mission Figs
- 1 large egg
- 1 box puff pastry
- 6.5 ounce goat cheese
- poppy seeds or sesame seeds, for topping
- all-purpose flour, for dusting
Instructions
- Add red wine vinegar, honey, red pepper flakes, salt, pepper and 1 cup water to a saucepan and stir until combined.
- Add the figs and bring to a boil.
- Once boiling, reduce the heat and let simmer for about 7-10 minutes or until liquid is almost evaporated and syrupy.
- Remove figs from pot and allow to cool. Cut into halves.
- Scoop about 1/2 - 3/4 teaspoon of goat cheese onto each half of fig and set aside.

- Cut into 1" sheets on 12" side. Then cut each strip in half making a 1 x 4.5" strip.
