I am deeming 2021 the year of the cookie. We always go through so many dessert trends, From frozen yogurt to cupcakes to macarons, there is always a certain dessert that takes off and everyone just HAS to have. You will suddenly see specific shops pop up that only sell that specific dessert and they do very well. With the recent opening of places like Crumbl, I think the cookie is making a comeback. And who doesn’t like a classic cookie. Is there much better than classic chocolate chip? Add sea salt, good quality dark chocolate and some pistachios, you have a sweet & salty take on the classic that you won’t be able to pass up!

Recipe:
STEP 1: Add flour, salt, baking powder and baking soda to a bowl and whisk until well combined. Set aside.
STEP 2: In another large bowl, mix butter, sugar, and brown sugar together until light & fluffy.
STEP 3: Add egg and vanilla and mix well.
STEP 4: Slowly add the dry ingredients into the wet ingredients and mix just until dough forms.
STEP 5: Add pistachios and dark chocolate chunks and fold into the dough.
STEP 6: Refrigerate dough overnight if desired.
STEP 7: When ready to bake, preheat the oven to 350 degrees and prepare a few baking sheets with parchment paper.
STEP 8: Roll dough into balls and place on baking sheets. Sprinkle each cookie ball with sea salt.
STEP 9: Bake for 10-12 minutes or until lightly browned.
STEP 10: Allow cookies to sit on sheet for a couple of minutes and then transfer to a wire rack to cool completely.

Dark Chocolate Sea Salt Pistachio Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon sea salt
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsalted butter, room temperature
- 1/4 cup sugar
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 3/4 cup shelled and chopped pistachios
- 1 cup chopped dark chocolate
- flaky sea salt, for sprinkling
Instructions
