I consider the day after Thanksgiving to be the official start of the Christmas season! Who’s with me?? This is my favorite time of year and I love ALL THE THINGS related to this holiday. My favorite thing to do during the season is bake! I can’t wait until my kiddos are old enough to really start baking with me.
Christmas morning I try to have a yummy breakfast for us to all eat while opening gifts. In this season of having littles, I don’t want to be slaving in the kitchen making elaborate homemade (insert labor intensive recipe here). But I do love the idea is warm and gooey cinnamon rolls. Here is a recipe that has all the cinnamon-y taste of a cinnamon roll without the kneading and rising and rolling. It’s so simple to throw together and can be made the night before (probably while your husband is putting together whatever toys Santa decided to bring your kids). I hope you enjoy as much as I did.

Recipe:
STEP 1: Preheat the oven to 350 and grease or line 2 loaf pans with parchment paper.
STEP 2: Cream together butter and sugar in a large bowl. Isn’t that the way all good recipes start?
STEP 3: Add Greek yogurt and mix.
STEP 4: Add heavy cream and vanilla and mix.
STEP 5: Add the eggs, 1 at a time, and mix until thoroughly combined after each one.
STEP 6: Whisk together the flour and baking soda in a separate bowl.
STEP 7: Add the flour mixture to the wet ingredients and mix until just combined. Don’t overmix here.
STEP 8: Mix 1/4 cup sugar and cinnamon in a small bowl until all cinnamon is distributed evenly.
STEP 9: Pour 1/3 of the batter into the bottom of your prepared loaf pan.
STEP 10: Sprinkle the first layer with half of the cinnamon/sugar mixture.
STEP 11: Pour another 1/3 of batter on top of the cinnamon sugar mixture and top with the rest of the batter.
STEP 12: Bake the pound cake for 50-60 minutes or until toothpick comes out clean.
STEP 13: Let the cake cool a little before removing from pan, than place on a rack to let it cool completely before icing.
MAKE THE ICING:
STEP 1: Beat butter and cream cheese together until well combined.
STEP 2: Add heavy cream, vanilla and powdered sugar and mix until smooth.
STEP 3: Pour the icing over the cakes and allow it to cool to set. I stuck it in the fridge to get it to harden a bit faster.
STEP 4: Slice and serve. They are great at room temperature, but I love to warm slightly in the microwave for just a few seconds.
