St. Patrick’s day is tomorrow! I am sure all parades have been canceled due to #coronovirus. However, nothing stops us from making food and celebrating at home, right?? So put on a big pot of corned beef and cabbage, decorate your house with all the green things you can find and invite a few friends over and celebrate with all the hand sanitizer you can find in the stores.
Of course, every celebration needs some festive desserts and you can’t get more festive than these Mint Brownies. With the addition of some green food coloring, these brownies will be super festive for any St. Patrick’s day event.

Recipe:
STEP 1: Add 3/4 cup dark chocolate morsels, butter and unsweetened chocolate to a medium to large saucepan and allow to melt.
STEP 2: Once melted, remove from heat a let cool.
STEP 3: Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper. Set aside.
STEP 4: When the chocolate mixture is cooled, add sugar and stir to combine.
STEP 5: Add eggs, one at a time, beating until just combined.
STEP 6: Add mint extract and stir.
STEP 7: In a small bowl, whisk flour, baking soda and salt together.
STEP 8: Add the flour mixture to the chocolate mixture and stir until just combined.
STEP 9: Add the rest of the dark chocolate pieces and gently stir into batter.
STEP 10: Spread batter into pan and bake for 25-30 minutes or until toothpick comes out clean.
STEP 11: Allow brownies to cool completely before adding frosting.

STEP 12: To make frosting: Mix together cream cheese and butter in a large bowl until creamy.
STEP 13: Add 1 cup of powdered sugar and mix.
STEP 14: Add mint extract and food coloring and mix. Add as much food coloring you need to get the desired color. Add 2-3 drops at a time, because you can’t go back!
STEP 15: Add the rest of the powdered sugar and mix. If the frosting is too thick, add a couple tablespoons of heavy cream. You want it to be just slightly thicker than a typical frosting.
STEP 16: Spread frosting over cooled brownies and refrigerate for about an hour before adding the chocolate glaze.
STEP 17: To make the chocolate glaze: Melt together the semi-sweet chocolate and butter over a double boiler or microwave.
STEP 18: Spread glaze over refrigerated brownies. Put back in the fridge for at least an hour before cutting to allow time for chocolate to set up. It makes it so much easier to cut.
STEP 19: Cut into squares and serve!

- Spread glaze over the refrigerated brownies and put back in the fridge until ready to cut. I recommend refrigerating for at least 1 hour to make it easier to cut.
