There is a big sports game coming up I hear. Apparently this is a big event that happens every year! I kid, but if you know me at all, you know that the sports aren’t really my thing. What is my thing, you ask? Parties. I love throwing parties and if I can create a party centered around a particular theme, I am here for it. Even if that theme involves a football game. I may not be into the game itself or even begin to know who is playing in said game, but I can always get behind a reason to gather with friends, eat good food and cheer something on. Even if the thing I am cheering for is the performer of the halftime show or which buffalo flavored appetizers is the best.

I grew up going to Super Bowl parties and I always looked forward most to what food is being served. Sometimes I really LOVE sports parties, because they serve the hearty heavy food that I love to indulge in. We all know the Buffalo anything is usually pretty prevalent at any super bowl party, but so is a tray of chicken nuggets. I love the spicy chicken nuggets from a certain fast food restaurant, so I decided to try my hand at my own version. I also decided to take it one step further in this season of post-partum dieting and switch out the chicken for cauliflower. These will be a hit at your super bowl party for your vegetarian friends, but are delicious enough to be enjoyed by the biggest carnivores.

Ingredients for Buffalo Cauliflower Nuggets:
- head of cauliflower
- eggs
- buttermilk
- hot sauce
- all-purpose flour
- panko
- butter
- smoked paprika
- onion powder
- garlic powder
- black pepper
- salt
- cayenne
Everything you need to make Buffalo Cauliflower Nuggets:
How to Make Buffalo Cauliflower Nuggets:
STEP 1: Prepare a baking sheet by placing a cooling rack onto a baking pan. Spray with cooking spray.
STEP 2: Mix together the buttermilk, eggs and a few dashes of hot sauce in a shallow dish.
STEP 3: Mix together the all-purpose flour, panko crumbs, and seasonings in another shallow dish.
STEP 4: Dip cauliflower into the wet mixture and let excess drip off.
STEP 5: Placed dipped cauliflower into the flour mixture and dredge cauliflower until coated. Shake off excess flour.
STEP 6: Place on prepared pan. Repeat with remaining cauliflower.
STEP 7: Bake cauliflower at 425 for 20-30 minutes or until crispy.
STEP 8: While cauliflower is baking, melt the butter and mix with the hot sauce. Set aside.
STEP 9: When cauliflower is done, toss with the buffalo sauce gently.
STEP 10: Place tossed cauliflower back onto the pan and place under the boiler for a few minutes.
Serve immediately!
Tips for making Oven “Fried” Nuggets:
Tip 1: Use High Heat – By baking the cauliflower at a higher heat, you will get that super crispy coating we all desire from a deep fried snack.
Tip 2: Use a Cooling Rack – Place a cooling rack on your baking pan allows air to circulate around the nuggets. This helps get all around crispy nuggets.
Tip 3: Serve immediately – Once putting the sauce on the nuggets, they will automatically lose a little bit of that crispiness. Throwing them back in the oven to broil helps, but these are best served immediately as they will lose crispiness the longer they sit.

Buffalo Cauliflower Nuggets
A vegetarian take on a classic buffalo dish.
Ingredients
- 1 head cauliflower
- 2 eggs
- 3/4 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup panko
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- pinch cayenne
- 1/2 cup hot sauce + a few extra dashes
- 1/3 cup butter
Instructions
- Prepare a baking sheet by placing a cooling rack onto the top and spraying with cooking spray.
- Mix together the buttermilk, eggs and a few dashes of hot sauce in a shallow dish.
- Mix together the all-purpose flour, panko and seasonings in another shallow dish.
- Dip cauliflower into the wet mixture and let excess drip off.
- Place dipped cauliflower into the flour mixture and dredge cauliflower until coated. Shake of excess flour.
- Place on prepared pan. Repeat with remaining cauliflower.
- Bake at 425 for 20-30 minutes of until crispy.
- While cauliflower is cooking, melt the butter and mix with hot sauce. Set aside.
- When cauliflower is done, toss with the hot sauce mixture gently.
- Place tossed cauliflower back onto the baking pan and place under the broiler for 3-5 minutes.
- Serve immediately.
