If you have read much of my blog or followed me on Instagram, you know by now, that I love to make homemade cheese crackers for all parties I throw. They are so easy to make-ahead. You can freeze dough and cook the day of or the day before. Not to mention, that they are really yummy. I have tried so many different variations with different cheeses, herbs and spices. I have bought the store-bought Black Pepper crackers for cheese boards and always enjoy that extra little bite, so I thought that would be great with a cheesy cracker, too.
These are another great recipe to bring to any holiday party this season or to put in a tin and take to a neighbor.

STEP 1: Beat butter until creamy.
STEP 2: Add parmesan cheese, flour, salt, thyme and pepper and mix until forms a dough.
STEP 3: Place the dough on some plastic wrap and roll into a 13″ log.
STEP 4: Wrap with plastic wrap tightly and freeze for at least 30 minutes. Or several days or weeks ahead of time.
STEP 5: When ready to bake, preheat oven to 350 degrees.
STEP 6: Slice dough into 1/4″ slices.
STEP 7: Place each slice on a baking sheet lined with parchment paper.
STEP 8: Bake for 15-20 minutes or until golden brown.
STEP 9: Allow to cool completely on a wire rack.
