Today is the first official day of Summer! I know, here in Nashville, it has already felt like summer for a couple of months, but today it is official.
What says “summer” more than watermelon and Popsicles. Why not combine the two??
These are super refreshing and the fresh mint adds an even more refreshing bite. Plus, anytime I get to clip fresh herbs from my balcony garden, I am HERE FOR IT.

RECIPE:
STEP 1: Make a mint simple syrup by combining water, sugar and mint in a small pot and heating over medium heat until sugar is dissolved, whisking occasionally.

STEP 2: Once the sugar is dissolved, remove the pot from the heat and cover with a lid. Allow the mint to steep for 30 minutes.

STEP 3: Refrigerate the simple syrup for at least 30 minutes while you prepare the rest of the Popsicle.
STEP 4: Pour the chopped watermelon into a blender and puree.blender
STEP 5: Refrigerate the pureed watermelon for at least 30 minutes.
STEP 6: Once the simple syrup and watermelon has been chilled, pour puree, simple syrup and lime juice into the blender and pulse a few times to get everything mixed together and mint chopped up.
Side note: Let this mixture settle a bit before pouring into your Popsicle molds. I didn’t and they settled while freezing – still delicious.

Watermelon Mint Popsicles

Ingredients
- 1 cup sugar
- 3/4 cup water
- 1/2 cup fresh mint
- 2 limes juiced
- 4 cups seedless watermelon
Instructions

Mkae a mint simple syrup by combining water, sugar and mint in a small pot ant heating over medium heat until sugar is dissolved, whisking occasionally.

Once the sugar is dissolved, remove the pot from the heat and cover with a lid. Allow the mint to steep for 30 minutes.

Refrigerate the simple syrup for at least 30 minutes.

Pour the chopped watermelon into a blender and puree.

Refrigerate pureed watermelon for 30 minutes.

Once the simple syrup and watermelon are chilled, pour puree, simple syrup and lime juice into the blender and pulse a few times to get everything mixed together and mint chopped up.

Allow puree to settle a bit (it will be foamy) and then pour into your popsicle mold and freeze overnight.
