As of Saturday, it was officially summer!! And you can feel it, since it has been 90 degrees here in Nashville over the last couple of days. All I want is all the frozen treats I can get my hands on. We have a little “hole in the wall” place down the street that sells the best Pelatas. They are just the perfect summer treat. I was successful at making some Watermelon Mint Popsicles last year and thought I would try some new recipes this year. I wanted to use strawberries since they are in season but wanted something fun and different. I did a google search and ran across this recipe that really intrigued me, that included tamarind to the refreshing strawberry popsicle.
What is tamarind?? All I new was that is its used a lot in Indian cooking which I am slightly obsessed with, so I was curious. Tamarind is apparently a fruit and has a sour or sweet tase depending on season. I decided to give it a try and ended up really loving the results and thought I would share with you!
These slightly tart and a little sweet popsicles packed with strawberry flavor were delightfully different and delicious. Try it out if you are looking for a unique flavor combo that is really refreshing.

Recipe:
STEP 1: Add water, sugar, tamarind paste and salt to a small saucepan and cook on high heat until is starts to boil, stirring occasionally.
STEP 2: Once it starts to boil and sugar is dissolved, remove from heat and allow to cool.
STEP 3: Add strawberries, mint and about 1/4 cup of tamarind mixture to a blender. Blend until smooth.
STEP 4: Add the rest of the tamarind mixture and stir until combined.
STEP 5: Pour the mixture into popsicle molds (or paper cups or whatever you have) and place in freezer until solid.
