Valentine’s Day is coming up in less than 2 weeks! It’s the time of year I want all the sweets and fancy desserts. Several years ago, my husband and I went to one of Nashville’s cool new restaurants at the time and pretty much ate our weight in food. That’s kinda what we do on dates. We are both total foodies and when we get the chance to go out, which is usually for special occasions, we pick the latest hot restaurant and order a TON of food and really go all out. Once we get to dessert, we are usually STUFFED, but seem to alway make exception if there’s anything that sounds good. This particular date, there was a Budino on the dessert menu. I had no idea what this was. A quick google search to find out it was basically a fancy pudding had me sold. I thought it would be lighter than a cake or something super rich. Let me tell you, I have been in love ever since. It was creamy, light and packed with flavor. When I came across a recipe for a Budino I knew I had to try to make it. It was easier than I thought it would be and now is one of my FAVORITE desserts. Seriously. My husband could eat an entire bowl of it.

Recipe:
STEP 1: Mix milk and cream together in a large bowl. Set aside.
STEP 2: Place brown sugar and water in a large saucepan and let the mixture come to a simmer over medium heat.
STEP 3: Once the mixture comes to a simmer, turn the heat up to medium high until it is slowly bubbling and the mixture has darkened.
STEP 4: Slowly whisk in the milk/cream mixture. Once the cream mixture and sugar mixture are fully combined, bring the mixture to a simmer. Once it comes to a simmer, turn the heat off.
STEP 5: While that mixture is heating, in another large bowl, whisk together the egg, egg yolks and cornstarch until combined.
STEP 6: Slowly pour half of the cream mixture over the eggs, whisking constantly as to not scramble the eggs.
STEP 7: Turn the heat back on to medium-high. Pour the cream/egg mixture back into the saucepan and whisk constantly.
STEP 8: Once bubbles start to form and pop, take saucepan off the heat and add butter and salt. Whisk until smooth.
STEP 9: Pour the mixture through a fine mesh sieve and then pour into serving dishes. You can use ramekins, shot glasses, parfait glasses or small cups.
STEP 10: Refrigerate budino.
STEP 11: Once the budino is chilled, squeeze a little bit of caramel on top of each one. You can also sprinkle with flaky sea salt.

Salted Caramel Budino
Ingredients
- 4 cups heavy cream
- 1 cup whole milk
- 1 1/4 cups light brown sugar
- 1/2 cup water
- 1 egg
- 3 egg yolks
- 5 tablespoons cornstarch
- 4 tablespoons butter cut into chunks
- 1 1/2 teaspoons sea salt
Instructions
