MINI PECAN TOFFEE PIES

Remember back in November when I posted the pumpkin cupcakes I made for the Woodland Creature baby shower? You should check that out here if not. Here is another dessert I made for that shower. I totally had planned to post this before Christmas since it’s a great holiday dessert, but, you know….life. You are in luck though, because these are really appropriate all year long and perfect for a mini bite for any shower, party or food gift. I have been making these forever. They are delicious and super cute. Annnndd, because they are bite size I have to keep myself from eating too many!ingredients_Fotor

Step 1: Preheat oven to 350 degrees.
Step 2: Roll out the pie crusts and use a biscuit cutter or glass to cut circles out of the dough. (note: The size you use will be determined by your muffin pan. I have found that some are slightly larger or taller than others. You just need to test out different sizes until you get the desired size.)pie crust 2
Step 3: Place the circles in the muffin tin and gently push down and up the sides.pie crust 1
Step 4: Combine the melted butter, brown sugar, flour, eggs and vanilla and whisk well.wet batter 1
Step 5: Stir in the pecans and toffee bits.wet batteringredients mixed 1
Step 6: Spoon mixture into the pie crusts.batter in cups 2
Step 7: Bake for 25 minutes or until set and lightly browned.
Step 8: Cool on wire racks and enjoy!


MINI PECAN TOFFEE PIES

Ingredients:
• 1 box (15 ounce) refrigerated pie crusts
• 1/4 cup butter, melted
• 1 cup brown sugar
• 2 tablespoons all-purpose flour
• 3 large eggs, lightly beaten
• 1 teaspoon vanilla
• 1 cup chopped pecans
• 1 package milk chocolate toffee bits

Directions:
Step 1: Preheat oven to 350 degrees.
