Ebel….what?? Ebelskiver! You know, that pan you saw at Williams-Sonoma and immediately decided you needed in the hopes of making this hard-to-pronounce confection that you never had but looked delicious and fun?? Also, that same pan that sat empty on your shelf for WAAYYY more years then I care to admit. Does anyone else do this? I insist on having every specialized kitchen utensil and then rarely use it! I actually do use more than most, but this definitely falls under the unnecessary but totally fun item to have.
I am also here to tell you that I totally regret having never used this until now. Ebelskivers are delicious! They are like a cross of pancakes and donut holes. Who wouldn’t like that???
Do yourself a favor. Go pick you up a pan and make these!

RECIPE:
STEP 1: Sift flour, cocoa powder, baking powder and salt together, then pour into a large bowl and set aside.
STEP 2: Whisk together eggs and sugar in another bowl.
STEP 3: Add in milk, melted butter and vanilla and whisk until smooth.
STEP 4: Pour the wet ingredients over the dry ingredients. Fold in until just combined.
STEP 5: Spray Ebelskiver pan with cooking spray and place over medium heat.
STEP 6: Pour or scoop batter into each well almost to the top.
STEP 7: Cook for about 2 minutes.
STEP 8: Use 2 long skewers or these special Ebelskiver skewers and place on each side of the ebelskiver to turn it over. Let the wet batter flow out into the well.
STEP 9: Cook for another couple of minutes.
STEP 10: Move the Ebelskiver to a platter and dust with powdered sugar.
We dipped our in a salted caramel sauce and it was delish!
Mexican Chocolate Ebelskivers
Ingredients
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon ground cardamom
- 1/2 teaspoon ancho chili powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon cayenne pepper
- 2 large eggs
- 1/4 cup sugar
- 1 cup milk
- 2 tablespoons butter melted
- 1 teaspoon mexican vanilla
Instructions
