How many barbeques or cook-outs have you had this summer??
We have a pretty big holiday that usually involves some sort of cookout coming up next week, so the next few posts, I’ll be sharing some of my favorite recipes for such an occasion.
What is a barbecue without baked beans? I have a confession. I never really ate baked beans. I didn’t always love them. BUT, I saw this recipe and thought it sounded good and knew I needed to try. They were delicious and I have been converted. And, now I am sharing it with you. It seems like a lot of steps, but taking the extra time to cook your own beans (instead of using canned) REALLY makes a difference.

Recipe:
Prepare the beans:
STEP 1: Put dried beans in a large bowl and cover with cold water. Let stand overnight at room temperature.Stainless Steel Mixing Bowl
STEP 2: After soaking beans overnight, drain the beans and then put into a large Dutch oven.Colander(similar)
STEP 3: Add 10 cups of water to the Dutch Oven and bring to a boil. You will want to skim the surface as they boil.Dutch Oven (similar)
STEP 4: Add oil, 1 teaspoon salt, thyme, bay leaves, and onion then reduce the heat to low. Cover and simmer for 30 minutes. Stir the beans occasionally.Dutch Oven (similar)
STEP 5: Remove thyme sprigs, onion and bay leaves. Stir in another teaspoon salt. Let the beans cool to room temperature.Dutch Oven (similar)
STEP 6: Put the beans in an airtight container and refrigerate until ready to use. I just put the Dutch Oven lid on my and refrigerated.Dutch Oven (similar)
Make the Baked Beans:

STEP 1: Preheat the oven to 375 degrees.
STEP 2: Chop and cook bacon in a skillet for about 5-10 minutes.Cutting Board
STEP 3: Drain and rinse the beans. In a small bowl, mix together ketchup, maple syrup, dry mustard, black pepper and curry powder. Glass Bowl
STEP 4: In a large bowl, combine beans and sauce.Stainless Steel Bowl
STEP 4: Spray a baking dish with cooking spray and pour bean mixture into it.White Ceramic Baker
STEP 6: Bake for 45-50 minutes until bubbly and browned.White Ceramic Baker

Maple-Bacon Baked Beans

Ingredients
Beans
- 1 pound dried beans
- 1/2 cup olive oil
- 1 tablespoon kosher salt
- 4 fresh thyme sprigs
- 2 bay leaves
- 1 large yellow onion quartered
Baked Beans
- 2 bacon slices chopped
- 6 cups beans rinsed and drained
- 1 cup ketchup
- 3 tablespoons pure maple syrup
- 2 tablespoons dry mustard
- 1/2 teaspoon black pepper
- 1 teaspoon curry powder
Instructions
