I have 2 kids who have birthdays in March, which means I am just now coming out of the fog of all things birthday parties (blogs on those coming soon). We do birthdays big at our house. I love making my loved ones feel super special on their day. Whether they get to have super awesome birthday parties designed and executed by yours truly or simply just have cake for breakfast, they get to do these fun things on that one day of the year. We can do BIG things or even small things to make our littles feel special. Just add sprinkles to it and it is festive. Which is exactly what I did when I made these special sprinkle birthday marshmallows.
These are such a fun way to make a basic (though there is nothing basic about homemade ones) marshmallow super festive. They would be perfect for a special dessert at a party or a great addition to a hot chocolate bar OR fun way to make birthday s’mores!

Recipe:
STEP 1: Butter or spray an 8×8 cake pan.Sift in powdered sugar and cover bottom and sides of pan until fully coated.
STEP 2: Add water, sugar, and light corn syrup to a saucepan with a candy thermometer attached. Stir until well combined.

STEP 3: In the bowl of an electric mixer, add gelatin with 1/2 cup cold water and let stand while preparing the sugar.
STEP 4: Bring mixture to boil over medium to medium-high heat until candy thermometer reaches 240 degrees.
STEP 5: Slowly pour hot sugar mixture over gelatin in the mixing bowl while mixing at the lowest speed.
STEP 6: Once all mixture has been poured into electric mixer, turn the speed up to high and allow to mix for 7 or until doubled in size and thick and fluffy.

STEP 7: Add in almond extract and salt and mix just until incorporated.
STEP 8: Add in sprinkles and mix on the lowest setting just until incorporated.

STEP 9: Pour marshmallow mixture into prepared pan.
STEP 10: Sprinkle more sprinkle on top and lightly press into the marshmallow.
STEP 11: Allow marshmallows to sit uncovered 6-8 hours or overnight.
STEP 12: Cut into squares.

Birthday Sprinkle Marshmallows
Ingredients
- 3 packets of unflavored gelatin
- 1 cup water, divided
- 1 1/2 cups sugar
- 1 cup light corn syrup
- 1/2 tablespoon vanilla
- 1/2 tablespoon almond extract
- 1/4 teaspoon salt
- 1-2 cups colored sprinkles
Instructions

- Add in sprinkles and mix on the lowest setting until just combined.
- Pour marshmallow mixture into prepared pan.
- Sprinkle more sprinkles on top and light press unto marshmallow, if desired.
- Allow marshmallows to sit uncovered 6-8 hours or overnight.
- Cut into squares.
